Mexican Chicken Wraps

I tore this recipe out of a Sam's club magazine in the fall of 07 and threw it in my recipe folder. I finally got around to trying it, and wish I had sooner! It's a hit, and a great, quick, easy, cool summer meal.


Mexican Chicken Wraps (makes 6 wraps)


1/2 c. mayonnaise

2 tsp. lime juice

1/2 c. chopped green onions

1/2 tsp. ground cumin

1/3 c. of your favorite salsa

2 dashes Tabasco (more if desired)


Combine these in your blender or food processor and blend until creamy.


2 c. shredded Rotisserie Chicken

6 flour tortillas (burrito size, 10 inch)

6 romaine spears (I used spinach leaves b/c that is what I had on hand)

1/2 c. chopped cilantro (this makes these taste so good, so if you're a cilantro hater, the whole recipe might taste a little less impressive)

1/2 c. black olives, chopped

1 1/2 c. shredded cheddar cheese


Combine all ingredients in the tortillas for wraps. :) enjoy!!

Just a couple of funny kids!!

Gotta post these on my blog for posterity sake.

Han told Russ last night that she was "pwetty shuh she was going to mahwy a wedneck someday!" I asked her what a redneck was and she said, "Someone just like my Daddy!!" If she can find someone as wonderful as her Daddy, she'll be a very blessed and happy woman!!

Hud's teacher should consider himself lucky today. Hud considered taking the stomach of the turkey his dad shot last night for show and tell. He thought it was cool to look inside and see what the turkey had been eating. Only in Kansas (maybe Arkansas too!)
